Quinoa Salad with Mangoes and Curry Dressing
From Vegetarian Cooking for Everyone by Deborah Madison Prep Time: 5 minutes Cooking time: 15 minutes Ingredients: Salt 1 1/3 cup quinoa, rinsed thoroughly 2 large mangoes 1 jalapeno chile, seeded, and diced 3 scallions, including an inch of greens, thinly sliced Curry Vinaigrette 1/3 cup almonds, roasted Directions: Bring 3 cups of water to a boil in a saucepan, then add ½ teaspoon salt and the rinsed quinoa. Prep time: 2 minutes Cooking time: 10-15 min Ingredients: 1 large head of kale 1 tablespoon apple cider vinegar 1 tablespoon olive oil coarse salt (to taste) Directions: Preheat over to 350°. Wash and de-stem kale by holding the stalk in one hand, and pulling down on the leaves with the other. Tear into bite sized pieces. If you have a salad spinner, dry the kale (this is not necessary, but is helpful) Spread onto a large baking sheet. Toss with the apple cider vinegar, and oil, and sprinkle with salt.
