Recipe: Marinated Grilled Peaches!
Posted on Aug 10, 2010 in Recipes | 0 commentsNothing, NOTHING, says summer more than peaches! A few weeks ago I went peach and blueberry picking with my good friend Jaime, and we had a blast! Close to 20 peaches for a mere $5! We left sticky, and full of fruit… the perfect reward for our hard work. While eating peaches right off the pit, in all their chin-drippy glory is a wonderous thing, I like to mix it up a bit and jazz them up (as if they need it!). These grilled peaches are to DIE for. There’s something extra special about doing this on an actual grill outdoors, but they’re still absurdly delicious done on the stove top. A nice bowl of nutty granola and a splash of almond milk make this a heavenly breakfast (or simple, homey dessert). Try these grilled peaches over a bowl of vanilla ice cream, and you will not be disappointed!

Ingredients:
4 ripe peaches, halved, and pit removed
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)
1/4 cup brown sugar
1-2 tablespoons balsamic vinegar
1 cup homemade granola
1 cup almond milk (optional)
Preparation:
1. In a large bowl combine halved peaches, vanilla, almond extract (if using), brown sugar, and balsamic vinegar. Toss to evenly coat and let sit for 10-15 minutes.
2. While the peaches are marinating, heat a grill pan over medium high-heat. Grill peaches, skin side down until browned, about 3-4 minutes. Turn and grill the other side until you get nice grill marks, about 1-2 minutes more.
3. In a bowl, place granola and top with grilled peaches. Serve with almond milk over the granola or on the side.
