Recipe: Watermelon Cucumber Cooler
Posted on Jul 13, 2010 in Recipes | 0 commentsNext to lemonade and a nice brisk peppermint iced tea, this is my favorite summertime drink, combining two of my favorite summer foods – watermelon (which I could eat all day every day!) and cucumber.
Both of these vine fruits are water heavy, and therefore cooling to our bodies – perfect in the scorching summer heat. While this is perfect as-is, it would also make a bright and fresh cocktail or even a great popsicle!
Ingredients:
4 cups chopped watermelon
2 cups peeled and chopped cucumber
2 cups water
4 teaspoons simple syrup or other liquid sweetener or more to taste
cucumber slices and mint leaves to garnish
Directions
Throw all ingredients, except for garnish into a blender and blend until completely smooth. Adjust sweetness if needed. Strain mixture through a fine sieve, pour into chilled glasses, and garnish with a slice of cucumber, and a sprig of mint.
